Role Description The Head Bartender is a full-time, on-site role based at Fonab Castle Hotel in Perth. This role oversees the day-to-day operation of the bar, including preparing and serving drinks, managing stock levels, and ensuring all beverages are presented and served to five-star standards. The Head Bartender leads and trains bar team members, sets service standards, and ensures a welcoming, safe, and efficient environment for guests. Responsibilities include designing and updating cocktail menus, coordinating with the Food & Beverage team for service during restaurant and event periods, and handling guest queries and feedback professionally. The role also involves accurate cash handling, maintaining hygiene and compliance standards, and supporting special events, tastings, and seasonal offerings.

Qualifications
- Strong customer service and communication skills, with the ability to engage confidently and professionally with a diverse range of guests.
- Proven experience in bartending and beverage preparation, including classic and contemporary cocktails, spirits, wines, and non-alcoholic offerings.
- Knowledge of food & beverage operations, including pairing drinks with menus and coordinating with restaurant and events teams.
- Accurate cash handling skills, including use of POS systems, cash reconciliation, and adherence to financial procedures.
- Previous experience in a supervisory or head bartender role within a quality hotel, restaurant, or bar environment.
- Strong organizational and time-management abilities, with a focus on attention to detail and maintaining high service standards under pressure.
- Understanding of health, safety, and licensing regulations related to bar operations.
- Flexibility to work evenings, weekends, and holidays as required by hotel operations.
- Formal training or certification in hospitality, bartending, or a related field is beneficial.
