General Manager – Marugame Udon

At Marugame Udon, we are passionate about great food, strong restaurant standards and creating memorable experiences for our guests.

We are looking for an experienced and driven General Manager to take full ownership of one of our restaurants and lead the team to deliver excellent operational, people and financial performance.

As General Manager, you will be responsible for the overall success of the restaurant, creating a strong team culture, maintaining high standards and delivering the business results expected from your location.

What you’ll be doing

• Taking full ownership of the day-to-day operation of the restaurant
• Leading the restaurant management team and Team Members
• Maintaining high standards of food quality, speed of service, hospitality and cleanliness
• Ensuring all company, operational, food safety, health & safety and legal standards are followed
• Managing daily routines, operational procedures and checklists effectively
• Acting as the operational expert in the restaurant and developing your management team
• Providing clear direction, coaching and performance feedback
• Taking ownership of audit actions and ensuring issues are fully resolved
• Maintaining the restaurant, equipment and facilities to the required standard

Commercial & Financial Leadership

• Taking full ownership of the restaurant P&L
• Delivering sales, labour and profit targets
• Forecasting accurately and adapting plans to trading patterns
• Building productive rotas that balance labour and operational needs
• Managing food cost through accurate ordering, waste management and inventory control
• Ensuring stock counts and documentation are accurate and completed on time
• Managing controllable costs and making data-driven operational decisions
• Leading business reviews and contributing to regional meetings

People & Guest Leadership

• Creating a positive, safe and inclusive working environment
• Recruiting, onboarding and developing managers and Team Members
• Building a strong succession plan and developing internal talent
• Conducting performance reviews and providing regular coaching
• Managing people matters professionally in partnership with HR and the Area Manager
• Being visible in the restaurant and engaging with guests
• Acting quickly on guest feedback and driving improvement actions
• Coaching the team to achieve strong service, speed, accuracy and hospitality results

Sales & Local Growth

• Understanding local trading patterns, competition and customer behaviour
• Driving guest loyalty through strong operational execution
• Leading local store marketing within company guidelines
• Delivering company promotions accurately
• Working closely with Area Managers, neighbouring GMs and Marketing
• Building a culture of confident and appropriate upselling

What we’re looking for

• Strong General Manager or senior restaurant management experience
• Experience leading a high-volume, fast-paced hospitality operation
• Strong commercial understanding and confidence managing a P&L
• Excellent leadership, coaching and communication skills
• A hands-on leadership style and strong operational standards
• Ability to build and develop a high-performing management team
• Strong understanding of labour, stock, food cost and restaurant KPIs
• A guest-focused mindset and passion for hospitality
• Ability to make confident, data-led decisions
• Flexibility to work evenings, weekends and peak trading periods
